The design of food facilities for instutions such as schools and universities presents challenges unique to learning institutions. School facility projects are typically delivered by local architects and engineers, yet these firms do not possess the knowledge required to design the facilities and processes needed for food preparation or research operations. Many times they local A/E firms will hire consultants (such as kitchen equipment consultants) to assist with the project. This does not provide a holistic solution, however. Many of the requirements for room finishes, MEP products, and electrical/mechanical equipment needed for a durable, sanitary, and efficient operation will not be understood by a team that does not have an extensive background in the design of these types of facilities.
